Colins Kawai hadn’t always wanted to become a
chocolatier, but life is full of surprises. He decided to start
his own small chocolate confectionary business almost six
years ago, after stumbling upon a simple hand-rolled
chocolate truffle recipe in a Sunset magazine- which he
successfully sold at a workplace fundraising bake sale.
Soon after, he acquired his first book about truffle-making
and chocolate dipping.  With a couple of half-day classes,
Kawai began his chocolate company.  He is currently in
the process of trademarking his company name, so for
now his company is simply called "Chocolates by Colins".
20% of all Chocolates by Collins profits are
donated annually to charitable organizations that
support peace and human rights issues, including
medical assistance and education needs for women
and children worldwide.  In addition, 30% of all
profits will be used to create a charitable
foundation to fund similar projects for future
generations.
Kawai's most romantic flavor is an open-faced, heart-shaped dark chocolate truffle with a smooth,
creamy raspberry Chambord ganache, topped with a fresh raspberry and drizzled with raspberry sauce.  
A close second are the butterscotch schnapps truffle, which is the most delicious and popular chocolate
in Kawai’s signature collection of liqueur truffles.   

For the future, Kawai envisions making the perfect chocolate truffle.  As a brand new start-up company,
Chocolates by Colins are not available for purchase anywhere as of yet.  Kawai is looking for the right
opportunity to arise.  Until then, Kawai is available for a limited number of special occasions, weddings,

chocolate fantasy and indulgence.”
 Kawai's truffles are quite unique
with their thin, delicate shells. This allows for a seamless, sexy chocolate
experience between its outer shell and the luscious smooth and creamy
ganache which awaits inside.  Kawai also offers a layered truffle of fruit,
and other flavors, lying on a sinfully delicious bed of ganache, which
provides for both a tantalizing and flavorful mouth-feel experience, not
to be missed
Using chocolates of the finest quality, including Belgium, French, and/or Swiss, Kawai specializes in
artisan dark chocolate truffles made fresh in Hawaii.  He describes these particular truffles as being
reminiscent of fine chocolates available only in Europe.

“For some people, my chocolates are the best they have ever consumed.”  For one valued friend, a
former French chef, Chocolates by Colins truffles are the best chocolates in the world.  Kawai relates the
perfection he aims to obtain in his chocolate truffle making as “monozukuri,” a Japanese term which
refers to "a centuries-old ideal of perfection in craftsmanship, seen in pottery and ancient sword-
making." His freshly made, artisan European dark chocolate truffles are made without artificial flavors,
colors or added preservatives; ensuring one of the best chocolate experience. In addition, Kawai also
infuses local flavors, such as mochi, haupia, coconut, and lilikoi in his chocolate creations.  
Monarch's staff was fortunate to sample
Kawai's decadent truffles.  The sampler box
contained 20 assorted truffles with five
different flavors.  Although each person had
their own favorite, we all  loved the thin, crisp
shell with the creamiest flavored fillings.  

Among all the flavors, the blueberry mochi
truffle was a big favorite for both its
uniqueness and taste.  The slight gummy
texture at the top of the truffle was a sweet
surprise and the subtle blueberry flavor
allowed for the creamy ganache to take center
stage.

The lychee truffle was another standout.  A
punch of lychee liqueur left you wishing real
shots tasted like this.  The other three flavors
were equally amazing, each varying a little in
taste.  Overall, these truffles were exactly as
described by the creator; smooth, creamy, and
sinfully delicious.  If you aren't a chocolate
lover, you will be after eating truffle made by
Chocolates by Colins.
